Air fryer Christmas ham flatbreads
Method
Combine the Greek yoghurt, flour, olive oil and salt in a large mixing bowl. Mix to form a sticky dough, then start to knead with your hands, adding a little more flour if too sticky.
Knead for 2-3 minutes until the dough becomes more supple and less sticky. Set aside to rest while you prepare the filling.
In a separate bowl, combine the ham, ricotta and feta. Chop any fresh herbs or chilli, if using, and stir through.
Divide the dough into four even balls and roll out into rough circles about the size of a small plate. Gently fold the edges back over to form a thicker edge.
Spread the ham mixture across the base of each ‘boat’, making a small indent in the centre. Crack an egg into each indent. Brush the edges of the dough with the melted butter, reserving the 4 tsp for serving.
Place the flatbreads into a lined air fryer basket, and cook for 15 minutes at 160C, until the bread is golden and risen, and the egg is cooked through.
Serve immediately, placing a teaspoon of butter on top of each egg, allowing it to melt over the flatbread.
