Banana aioli

Method

Place the eggs, lemon juice and dijon mustard in a stainless steel bowl and whisk well.

Slowly add oil while whisking rapidly. Continue adding the oil until it resembles a thick mayonnaise.

Smash your banana in a separate bowl with a fork and add it to the aioli.

Mix well until properly combined.

To serve

This aioli goes with so many things but it’s wonderful with a beef, blue cheese and bacon burger.

As a general rule, aioli has garlic in it but don’t be afraid to ditch it in favour of the gorgeous homegrown Sweeter Bananas. You won’t regret it!
