Classic club sandwich & sweet potato chips

Method

Serves 2

Preheat oven to 180C.

On a lined tray, spread out the sweet potato slices evenly. Drizzle with oil and 1 tsp of your favourite seasoning from Smokey Joe’s Rubs, along with a good pinch of salt. Turn over and repeat.

Place sweet potato in oven, cooking for 15 mins. Turn chips over and cook for a further 15-20 mins. Keep an eye on them, as thinner-cut chips will cook quicker.

Meanwhile, coat the chicken breast in the remaining Smokey Joe’s rub, along with a drizzle of oil. Grill the chicken for about 5 minutes over medium heat, turning to cook through evenly. Remove and set aside to rest.

In the same pan, cook the bacon to your liking and then remove.

Lightly toast the bread in the bacon pan, soaking up any remaining juices.

Slice the chicken into thin pieces. Mix the mayo, mustard and basil together and spread evenly across each slice of bread.

To assemble your sandwich, layer chicken, bacon, tomato and lettuce, with a slice of bread in the centre. Skewer and slice sandwiches in half.

Remove the sweet potato chips from the oven and serve immediately alongside the sandwiches.
