Country style vanilla slice

Method

Preheat oven to 180C. Place the pastry sheets on two trays lined with baking paper and prick sheets with a fork. Bake for 20 minutes until puffed and golden brown. Remove from oven to cool.

Whip the cream until peaks form, then set aside. Whisk the vanilla pudding mix and milk in a separate large bowl. Quickly fold the whipped cream into the pudding mix and spread over the top of one pastry sheet. Place the other sheet on top.

To make the lemon icing, sift the icing sugar in a bowl and stir in butter, lemon juice and water. Spread over the top of the slice. Leave to set for 10 minutes in the fridge.

When ready to serve, cut the vanilla slice into 12 or more pieces.

This can be made ahead and kept in the fridge. It's best eaten on the day it is made but will keep in an airtight container for another day or so.
