Green beans & bacon
Method
Preheat oven to 200C. Arrange bacon rashers on an oven tray lined with baking paper and cook for 12 to 20 minutes until crispy (time required will depend on the thickness of bacon).
Drain on kitchen paper. When cool, chop bacon finely and set aside.
Bring a large saucepan of water to boil and salt. Blanch beans for 5 minutes then remove from saucepan and transfer to a bowl of iced water for 2 minutes. Drain well.
In a small clean jar, combine olive oil, vinegar, garlic clove, mustard, honey and salt. Tighten the lid and shake to combine, then leave to allow garlic to infuse into the dressing.
To serve, add beans to a serving dish. Shake dressing jar, vigorously then drizzle dressing over the beans, omitting the garlic clove. Top with crispy bacon pieces to serve.
