Summer yoghurt pops
Method
Makes about 12 serves – you will need 12 icypole moulds for this recipe. (V, GF)
Finely chop the fruit of your choice (*see handy tip) and mix together in a large bowl. You could also blend them if you wish. Divide evenly among the icypole moulds
Drizzle in some honey, if using. There are so many great local honeys – try Piesseful Bees or Little Eden Farm.
Fill the moulds with yoghurt (Western Australian, naturally – try Brownes Dairy, Bookara Goat Dairy or Mundella Foods).
Give the moulds a tap against the bench a few times to knock out the air and then add more yoghurt if needed.
Freeze for 4-6 hours or overnight.
Pop them out when ready to eat for a quick and easy summer time snack.
Handy Tips
Strawberries, bananas, mangoes, cherries and other berries are all great in these frozen delights.
