Method
Melt the butter in a small saucepan, then add the flour and stir to combine into a thick roux.
Allow to cook for minute, then pour in the beer, whisking to form a thick sauce. While still whisking, add the milk and combine.
Turn off the heat and add the cheese, mixing until the cheeses have melted and you have a thick sauce. Season, then set aside to cool.
Slice the bread, and butter the outsides of each slice. Add the ham to the bottom slices, then add 2-3 large spoonfuls of the cheese sauce to the sandwich.
Add the top piece of bread, and toast in your sandwich toaster or airfryer for 5 minutes until the outsides are golden and crunchy.
